Everything You’ll Need to Make Easy Easter Bunny Sugar Cookies
- For the Cookies: This simple cookie recipe calls for room temperature butter, brown sugar, vanilla extract, egg, flour, baking soda and a pinch of salt. My secret ingredient? Coffee liqueur! You can totally skip this step, but I have found that a teaspoon of Kahlua adds a distinct and delicious flavor to my signature sugar cookies.
- For the Buttercream: You’ll need just a tiny bit of buttercream to attach your bunny tails. You can easily make some using a little bit of butter, powdered sugar and vanilla extract. You can of course, you can also use store-bought icing if you are pressed for time!
- For the Decorations: To replicate the look of these cookies, you’ll need some large pearl sprinkles and a roll of 3/8-inch satin ribbon.


How to Make Easy Easter Bunny Sugar Cookies
- Make the Dough: In a medium mixing bowl, cream together butter and brown sugar. Add vanilla, coffee liqueur and egg and continue to mix until combined. Add flour, baking soda and salt and mix until combined and dough ball forms. (Please note, a stand or handheld mixer would be helpful and speed up the process, however, I do not own either and am still able to easily mix the cookie dough.)
- Roll and Cut: Roll the dough on a heavily floured surface to ¼ inch thickness. Using the Easter bunny cookie cutter, cut out cookies and place on a lined baking sheet. Re-roll dough as needed and continue to cut out cookies until all is used.
- Bake: Bake cookies six at a time for 8 minutes or until golden. Cool on baking sheet for at least 5 minutes, then transfer to a wire baking rack to continue cooling.
- Make the Buttercream: To make buttercream frosting, mix together butter, powdered sugar and vanilla extract until thoroughly combined.
- Decorate Bunnies: To decorate cookies, use a small dollop of buttercream to attach a pearl sprinkle as the tail for each bunny. Finally, tie a 6-inch ribbon around the neck of each bunny.


Tips for the Best Easter Bunny Cookies
- To avoid spreading, chill your cookie dough in the refrigerator for an hour before rolling and cutting.
- Let frosting set before stacking cookies on top of one another.
- Store in an airtight container for up to a week or pack in individual treat bags to display or pass out as party favors.

- 1 egg
- 1 cup flour
- 1/4 tsp baking powder
- pinch salt

- 1/2 tsp vanilla
For the Decorations
- large pearl sprinkes
- 3/8-inch satin ribbon
