Easy Easter Bunny Sugar Cookies

For the Cookies
- 6 tbsp butter room temperature
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 tsp coffee liqueur optional
- 1 egg
- 1 cup flour
- 1/4 tsp baking powder
- pinch salt
For the Buttercream
- 2 tbsp butter room temperature
- 1/3 cup powdered sugar
- 1/2 tsp vanilla
For the Decorations
- large pearl sprinkes
- 3/8-inch satin ribbon
Preheat oven to 350 degrees F.
In a medium mixing bowl, cream together butter and brown sugar.
Add vanilla, coffee liqueur and egg and continue to mix until combined. Add flour, baking soda and salt and mix untilcombined and dough ball forms.
Roll dough on a heavily floured surface to ¼inch thickness. Using Easter bunny cookie cutter, cut out cookies and place on a lined baking sheet. Re-roll dough as needed and continue to cut out cookies until all is used
Bake cookies six at a time for 8 minutes or until golden. Cool on baking sheet for at least 5 minutes, then transfer to a wire baking rack to continue cooling.
To make buttercream frosting, mix together butter, powdered sugar and vanilla extract until thoroughly combined.
To decorate, use a small dollop of buttercream to attach a pearl sprinkle as the tail for each bunny. Finally, tie a 6-inchribbon around the neck of each bunny.
