March 13, 2024Packed with superfoods, nuts and mild, creamy cheese, this Gooseberry Burrata Salad makes a light and lovely appetizer or meal.
On my weekly trip to my local Trader Joe’s, I discovered a food that I had yet to try – gooseberries. Very much intrigued, I grabbed a carton and decided to put together a salad with these little golden berries as the star. If, like me, you have never tried gooseberries before, I would describe them as similar to a sweet cherry tomato, but a little more tart.
I decided to use mixed greens and arugula as the base of my salad, and figured light fare such as cucumbers and avocados would complement the gooseberries well enough. Next to the greens, I found a pre-made green goddess salad dressing that looked yummy. I also grabbed some chopped pecans and tried my hand at honey-roasting them myself to add a touch of sweetness and some crunch to the salad. Finally, I added a tub of burrata to my cart because you really cannot go wrong with burrata on a salad!
Armed with my newfound ingredients and motivated by the impending arrival of dinner guests, I set out to assemble my salad!
Everything I Used to Make This Gooseberry Burrata Salad:
Here’s the ingredients you’ll need to make this fabulous salad.
- Mixed Greens & Arugula: I chose to combine a spring mix with some arugula to create the base of my salad, but you can truly use whatever kind of greens or lettuce you want! I chose these options because they have a nice flavor and crunch, and they also deliver nutrients compared to other kinds of lettuce.
- Olive Oil & Lemon Juice: I always love to toss my salad greens with olive oil, lemon juice, salt and pepper – it immediately softens the texture of the greens and takes their flavor profile to the next level.
- Cucumber: I simply grabbed an English cucumber at the store and cut it into thin slices to top add to the salad.
- Avocado: Avocado is always good in a salad! It adds a delicious flavor and some nice healthy fats to the mix, so you can really feel good about what you’re eating.
- Gooseberries: I found it fun to shake up this recipe with an ingredient that was a little less common – it’s always fun to try something new! However, if you are trepidatious or do not have access to gooseberries, cherry tomatoes or some kind of tomato medley would make a great substitute in this salad.
- Honey Roasted Pecans: You can easily buy honey-roasted pecans or whichever kind of honey-roasted nut you prefer! I tried making my own for the first time by tossing plain chopped pecans in honey mixed with a little water and salt, and then baking them at 350 for about 10 minutes (full recipe coming soon). Not going to lie, I left them in the oven for a little too long and burnt them a bit. But they were still delicious, so much so that my husband and our guests ate them all!
- Burrata: I feel like adding burrata is truly the simplest way to elevate any dish, it’s always a hit! I like to break it apart over top of the salad so that the stracciatella spills out, and then top it with a little more olive oil, salt and pepper for good measure.
- Green Goddess Dressing: To keep things simple, I opted to use a store-bought green goddess salad dressing. Feel free to use whatever salad dressing you prefer or mix up your own at home. I think a nice balsamic dressing would also pair great with this salad!
How to Make a Gooseberry Burrata Salad:
- Set Out Burrata: Remove your burrata from the refrigerator and allow it to sit out for 20-30 minutes before adding it to the salad and serving.
- Mix Greens: Simply pour your bag of mixed greens and arugula, or whichever greens you choose, into a large bowl and drizzle with olive oil, lemon juice, salt and pepper. Then toss to coat them in all that goodness.
- Assemble Salad: Add sliced cucumber, avocado, gooseberries and pecans to the top of the salad. Then pull apart your burrata balls over top and drizzle with a little extra olive oil, salt and pepper!
- Serve: Serve this beautiful salad family style with a green goddess dressing on the side – or any dressing of your choosing.

Gooseberry Burrata Salad
Equipment
- 1 large bowl
Ingredients
- 5 oz bag mixed greens
- 2 cups arugula
- 2 tbsp olive oil
- 1 tbsp lemon juice fresh
- 1 cucumber sliced
- 2 avocados sliced
- 6 oz carton gooseberries
- 1/3 cup honey roasted pecans
- 8 oz burrata
- salt & pepper to taste
- green goddess dressing store bought
Instructions
- Remove burrata from the refrigerator and allow to sit out for 20-30 minutes while prepping and assembling the salad.
- Add mixed greens and arugula to a large bowl. Top with olive oil, lemon juice, saltand pepper and toss to coat.
- Add cucumber, avocado, gooseberries and pecans over top of the greens.
- Top with burrata by carefully pulling apart balls across the salad.
- Serve with green goddess dressing!
