Gooseberry Burrata Salad
Packed with superfoods, nuts and mild, creamy cheese, this Gooseberry Burrata Salad makes a light and lovely appetizer or meal.

- 5 oz bag mixed greens
- 2 cups arugula
- 2 tbsp olive oil
- 1 tbsp lemon juice fresh
- 1 cucumber sliced
- 2 avocados sliced
- 6 oz carton gooseberries
- 1/3 cup honey roasted pecans
- 8 oz burrata
- salt & pepper to taste
- green goddess dressing store bought
Remove burrata from the refrigerator and allow to sit out for 20-30 minutes while prepping and assembling the salad.
Add mixed greens and arugula to a large bowl. Top with olive oil, lemon juice, saltand pepper and toss to coat.
Add cucumber, avocado, gooseberries and pecans over top of the greens.
Top with burrata by carefully pulling apart balls across the salad.
Serve with green goddess dressing!
