Gooseberry Burrata Salad

Packed with superfoods, nuts and mild, creamy cheese, this Gooseberry Burrata Salad makes a light and lovely appetizer or meal.

Ingredients
  

  • 5 oz bag mixed greens
  • 2 cups arugula
  • 2 tbsp olive oil
  • 1 tbsp lemon juice fresh
  • 1 cucumber sliced
  • 2 avocados sliced
  • 6 oz carton gooseberries
  • 1/3 cup honey roasted pecans
  • 8 oz burrata
  • salt & pepper to taste
  • green goddess dressing store bought

Instructions
 

  • Remove burrata from the refrigerator and allow to sit out for 20-30 minutes while prepping and assembling the salad.
  • Add mixed greens and arugula to a large bowl. Top with olive oil, lemon juice, saltand pepper and toss to coat.
  •  Add cucumber, avocado, gooseberries and pecans over top of the greens.
  • Top with burrata by carefully pulling apart balls across the salad.
  • Serve with green goddess dressing!
