This creamy, dreamy drink brings together the rich flavors of pumpkin spice, cinnamon and smooth RumChata. This festive beverage is perfect for autumn dinner parties, Halloween parties or simply unwinding after a long day. Imagine sipping this warm-spiced martini, as you enjoy a nice chill in the air and take in the swirling fall colors.
The best part? It’s super easy to make! This cocktail has quickly become my husband’s seasonal favorite and personally, I would take this deliciously sweet, ice cold martini over Halloween candy any day! Ready to treat yourself? Everything You’ll Need to Make a Pumpkin Spice RumChata Martini
Here’s the ingredients you’ll need to make this indulgent cocktail.
- Vodka: Any 80-proof vodka will work for this recipe – I usually go with Tito’s or Kirkland. You could also use vanilla flavored vodka and skip the vanilla extract! I personally love OYO Honey Vanilla Bean Vodka from Middle West Spirits, a local Columbus, Ohio distillery.
- Pumpkin Spice RumChata: The star of this cocktail is really the special edition Pumpkin Spice RumChata! If you don’t have Pumpkin Spice RumChata or can’t find it at your grocery store, I would use regular RumChata or Irish Cream and then add an extra tablespoon of pumpkin puree.
- Half & Half: Half-and-half makes this cocktail extra creamy! If you don’t have half-and-half, you could also use whole milk or heavy whipping cream.
- Pumpkin Puree: A little bit of pumpkin puree adds some authentic pumpkin flavor to this martini!
- Honey: A little honey adds a touch of sweetness to the bitter pumpkin puree. Simple syrup would also work in a pinch, or if you are looking to make your cocktail a little less sweet, you can skip this ingredient.
- Vanilla Extract & Sea Salt: I like to add a little vanilla extract and pinch of sea salt to the mix to create a sweet and salty flavor contrast!
How to Make a Pumpkin Spice RumChata Martini
- Prep Your Glass: If you’d like to serve your martini in a nice frosty glass, I recommend putting it in the freezer for ten minutes before shaking and serving your martini.
- Shake: Add ice, vodka, Pumpkin Spice RumChata, half and half, pumpkin puree, vanilla extract, honey and sea salt to your cocktail shaker. Cover and shake for 30 seconds.
- Strain, Garnish & Serve: Strain the martini into your martini glass, then garnish with a sprinkle of pumpkin pie spice and serve!
Serving A Crowd
These drinks are best served on the spot, so if you’re planning to serve this cocktail for multiple people, I recommend mixing them two at a time in your cocktail shaker.

- cocktail shaker
Ingredients
- 1.5 oz Pumpkin Spice RumChata
- 1.5 oz vodka
- 1 oz half-and-half
- 1 tbsp pumpkin puree
- 1/4 tsp vanilla extract
- 1 tsp honey
- sprinkle sea salt
Instructions
- Add ice, vodka, Pumpkin Spice RumChata, half-and-half, pumpkin puree, vanilla extract, honey and sea salt to a cocktail shaker. Cover and shake for 30 seconds.
- Strain into martini glass and top with pumpkin pie spice.
- Serve and enjoy!
Notes
- If desired, place martini glass in the freezer for 10 minutes before making the recipe.
