I recently served this quiche for a Galentine’s Day brunch that I hosted for my girlfriends! There’s just something magical about a warm homemade quiche baked with love – everyone was raving about it! With a rich, creamy filling surrounded by buttery crust, every bite is sure to impress, and shows you’ll go the extra mile for the ones you care about.
Why Everyone Will Love This Quiche Recipe
While a homemade quiche looks complex, it is really quite simple to put together, it just takes a little bit of time! Straightforward ingredients, like eggs, heavy cream and cheese plus some fresh veggies and spices come together beautifully to create a rich and flavorful dish. The real kicker is the homemade quiche – which takes five minutes to whip up but really adds that special touch. I promise, creating a gorgeous meal that is impressive to whoever you decide to share it with couldn’t be easier!

Everything You Need to Make a Tomato Basil Three Cheese Quiche
- For the Crust: This simple homemade basil crust calls for all-purpose flour, olive oil,
water, chopped fresh basil and a pinch of salt. - For the Filling: This creamy, cheesy filling includes 8 large eggs, heavy cream and three kinds of cheeses: Parmesan, goat cheese and Tuscan blend (you can also use mozzarella in place of the Tuscan blend.) The filling also includes diced tomatoes, fresh basil, minced garlic, dried oregano, Italian blend seasoning, salt and pepper.
- For the Garnish: If you would like to add decorative heart-shaped tomato slices to your quiche, you’ll need a medium-sized tomato and heart-shaped cookie cutter (the one I used is 2.75 inches.)
How to Make a Tomato Basil Three Cheese Quiche
- Preheat Oven & Prepare Dish: Preheat the oven to 350 degrees and spray a round pie dish with cooking spray or oil.
- Make Crust Dough: In a medium bowl, combine flour and a pinch of salt. In a small bowl, whisk together oil, water and fresh basil. Pour wet mixture into dry mixture and stir until a dough ball forms. (Sometimes I like to make my dough the night before and store it in the refrigerator so it’s ready to go in the morning!)
- Spread Dough: Spread your dough into pie dish using your hands, making sure it goes all the way up the sides of the dish. When you are done, set your pan aside.
- Mix Filling: In a large bowl, whisk together eggs, heavy cream, parmesan, goat cheese and Tuscan cheese. Add tomatoes, basil, garlic, oregano, Italian seasoning, salt and pepper and whisk until fully combined.
- Bake: Bake quiche for 40 minutes.
- Prepare Garnish (Optional): If you would like to decorate your quiche with some heart-shaped tomato slices like I did, simply slice your tomato into thick slices. Choose the two largest slices and use a heart-shaped cookie cutter to cut the slices into hearts. You may need to go around the cookie cutter with a knife before removing to ensure a clean cut.
- Decorate and Finish Baking: Remove quiche from oven and carefully place heart-shaped tomato slices on top of the quiche. Return the quiche to the oven and bake for 10-15 more minutes or until the quiche has set.
- Let Cool & Enjoy: Remove from the oven and make sure to allow the quiche to cool for 10-15 minutes before serving so that it can fully set. Enjoy!

Making Quiche Ahead of Time
When hosting company, especially for a brunch when I know I won’t have much time to prepare in the morning, I like to bake my quiche the night before and reheat it the next day. To do this, simply allow your quiche to cool completely, cover with plastic wrap and store in the refrigerator overnight. Reheat quiche in the oven at 350 degrees F for 15-20 minutes and serve hot! Technically, quiche can also be served at room temperature, but I personally prefer to enjoy it nice and warm.

Storage Tips
You can cover and refrigerate this quiche for 3-4 days. If you would like to warm it up, simply reheat a piece in the microwave for 1 minute. Sometimes I like to bake one on a Sunday evening and enjoy it for breakfast for the week!
