Tomato Basil Three Cheese Quiche

This elegant Tomato Basil Three Cheese Quiche is filled with juicy tomatoes, fresh basil, Parmesan, goat cheese and a Tuscan blend topped with adorable heart-shaped tomato slices. Ingredients
  

For the Crust

  • 1 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1 tbsp fresh basil chopped
  • pinch salt

For the Filling

  • 8 eggs
  • 1 cup heavy cream
  • 1/3 cup Parmesan
  • 1/3 cup goat cheese
  • 1/2 cup Tuscan blend cheese or mozzarella
  • 2 medium tomatoes diced
  • 1 tbsp fresh basil chopped
  • 1 tsp minced garlic
  • 1 tsp oregano
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper

For the Garnish

  • 1 medium tomato

Instructions
 

  • Preheat oven to 350 degrees. Spray round pie dish with cooking spray or oil.
  • In a medium bowl, combine flour and pinch of salt. In a small bowl, whisk together oil, water and fresh basil. Pour wet mixture into dry mixture and stir until a dough ball forms.
  • Spread dough into pie dish using your hands. (Make sure it goes all the way up the sides of the dish.) Set aside.
  • In a large bowl, whisk together eggs, heavy cream, parmesan, goat cheese and Tuscan cheese. Add tomatoes, basil, garlic, oregano, Italian seasoning, salt and pepper and whisk until fully combined.
  • Pour mixture into pie pan and bake for 40 minutes.
  • While quiche is baking, slice tomato into thick slices. Choose the two largest slices and use cookie cutter to cut slices into hearts. (You may need to go around the cookie cutter with a knife before removing to ensure a clean cut.)
  • Remove quiche from oven and carefully place heart-shaped tomato slices on top of quiche. Return quiche to the oven and bake for 10-15 more minutes or until the quiche has set.
  • Remove from oven and allow quiche to cool for 10-15 minutes before serving. Enjoy!

Notes

When hosting company, I often like to bake my quiche the night before and reheat it the next day. To do this, simply allow your quiche to cool completely, cover with plastic wrap and store in the refrigerator overnight. Reheat quiche in the oven at 350 degrees F for 15-20 minutes and serve hot.
