Fall Pumpkin Spice Granola

- 1/4 cup olive oil
- 1/4 cup honey
- 1 tbsp maple syrup
- 1/4 cup brown sugar
- 1 tsp vanilal extract
- 1/2 cup pumpkin puree
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- sea salt to taste
- 1 cups old-fashioned oats
- 1/2 cup mixed nuts
Preheat oven to 350 degrees F.
In a large bowl, whisk together olive oil, honey, maple syrup, brown sugar, vanilla extract, pumpkin puree, cinnamon, pumpkin pie spice and sea salt.
Add oats and nuts and stir to combine.
Spread mixture on a well-oiled baking sheet and bake for 20 minutes or until crispy.
Let cool for 15 minutes and enjoy immediately or store in a well-sealed containerfor up to five days.
