Pumpkin Spice Bourbon Bread

Ingredients
  

  • 1 3/4 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 15 oz can pumpkin puree
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1 tsp bourbon

For Topping

  • 2 tbsp brown sugar

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, add dry ingredients (flour, sugar, brown sugar, baking soda, cinnamon, pumpkin pie spice and salt) and stir.
  • In a separate medium mixing bowl, whisk together wet ingredients (pumpkin puree, eggs, vegetable oil, milk, vanilla extract and bourbon.)
  • Add wet ingredients to the bowl of dry ingredients and stir to combine. (It’s okay if the mixture stays a little chunky, try not to over-stir.)
  • Pour batter into a well-greased 9×5-inch loaf pan and bake for 20 minutes.
  • After 20 minutes have passed, remove bread and top with brown sugar.
  • Return bread to the oven for 30-40 minutes and bake until golden brown. Let cool for 15-20 minutes before serving.
